The Syrah 2005 is a selection of wines from the limestone-clays which surround the Thau pond, particularly from the village of Bouzigues where we are located.

For this warm vintage, harvests started on September 4th for the first part. The rains between the 5th and 8th required a break to dry the vineyards and the grapes, and we finished harvesting on the 11th and 12th. The entire vinification is focused on the coolest expression of the grape. The skin maceration is short, just three hours, but allows a nice colour extraction. Fermentation temperature is regulated during three weeks between 12°c and 14°c. The following work on the lees is fully dedicated to keep freshness and fruit until the bottling.

Far away from the heavy rosé de saignée, the Syrah 2005 is, from the vine to the bottle, entirely focused on the freshest aromatic expression of Syrah.
